Where to buy maize meal in Australia, and how to cook pap with it

Wondering where to buy maize meal Australia has on its shelves? Here is the short answer. Woolworths lists a few South African brands, South African grocers sell it in bags from 1 kg to 10 kg, and most of them post it. Maize meal is a dry staple, so a bag travels well and keeps for months. The only real trap is buying the wrong grade, which is why the second half of this guide covers that and the pap itself.

Maize meal is the ground white maize that South Africans cook into pap, the thick porridge that sits next to the meat at every braai. It is also called mealie meal or mielie meal. The details below come from each retailer’s own website, checked on 20 October 2026. Stock changes quickly, so treat the list as a map and not a promise. Which maize meal should you buy?

This is where people go wrong. South Africa mills maize into many grades. The miller Roff describes super maize meal as the highest quality and most popular grade, usually white maize put through a degerminator and roller mills. For smooth pap, porridge and paptert, super is the one to buy. Iwisa and the other “super” bags above are this grade.

Coarse braaipap is a different thing. It is milled for krummelpap, the dry, crumbly pap you fork apart beside a steak. Put it in a bowl of soft porridge and it stays gritty. Both grades are white maize, so the colour will not warn you. Read the word “super” or “braaipap” on the bag. Samp is coarser again, a cracked maize used in samp and beans, and is not a pap meal at all.

How to cook pap with it

Pap is a ratio before it is a recipe. South African pap is measured in cups, and a South African cup is 250 ml. Roughly two parts water to one part maize meal gives a soft, breakfast-style pap. Pull the water back towards one and a half parts and you get a stiffer pap that holds its shape beside the meat. That is our working ratio, not a rule from a miller, so adjust to your bag.

For a first attempt, our microwave mieliepap uses 2 cups of super maize meal to 4 cups of water, with salt and butter, and takes about ten minutes. Salt goes in with the water, not at the end. If you want to bake with it, our paptert uses raw maize meal in a single dish and goes well beside other braai side dishes.

Maize meal, cornflour and the swaps

Do not confuse maize meal with Maizena, which is the fine cornflour used for thickening. They come from the same plant and do completely different jobs. Our Maizena versus cornflour guide explains the difference. For what to reach for when the shop is out, see our South African ingredient substitutes guide.

What to look for on the bag

Check three things before you pay. First, the word “super” or “braaipap”, which tells you the grade. Second, the colour: South African pap is made from white maize, so a yellow meal is a different product, closer to what other countries sell as cornmeal. Third, the country of origin. Brands like Iwisa are products of South Africa, which is exactly what you want when the aim is a pap that tastes like home.

Once you have the right bag, serve the pap the traditional way. Tamatiesmoor, the slow-cooked tomato and onion relish, is the classic partner, and anything with gravy works too. A good wors and a bowl of pap is, for many South Africans, the whole meal.

Buying and storing it

If you are still working out where to buy maize meal Australia wide without paying for heavy freight, start with the supermarket and only order a big bag online once you know you will use it. Buy the size you will use. A 1 kg bag is plenty for a first try, and a 5 kg or 10 kg bag only makes sense if pap is a weekly habit. Keep it in a sealed container somewhere cool and dry. If you see damp, lumps or anything that looks like insects, bin it. Shipping weights add up, so a heavy bag can cost a fair bit to post, which is one reason the supermarket route is worth a look.
